Easy Cheesy Vegan Quesadillas
These are the perfect 15 minute quesadilla replacers. The cashew cheese won’t be the melty stringy greasy type you’re used to in a typical taco bell run, but it’s certainly robust, flavourful and just the right amount of creamy to make this a savoury afternoon snacking staple.
I didn’t follow the recipe exactly, I pretty much just filled mine with cashew cheese, tomato slices, and avocado. But the versatility of this recipe is boundless. Stuff these cheesy triangles with whatever veggies are in your fridge, beans, rice, pineapple, anything your heart desires. Makes enough cashew cheese for four-six quesadillas depending on how cheesy you make them.
**Afternote: not a cheese that ages well, best if used immediately. I’d cut the cheese recipe if necessary for how many you’re serving.
