Mexican Chickpea Scramble (Served Here in Tacos With Salsa)
Surprisingly, there is one healthy food that Andrew likes and I don’t–chickpeas. Chickpeas are protein packed superfoods that are so beneficial to any diet and I’ve always wanted to love them! Im so excited to have finally found this spicy scramble that can get us both excited about the taste. The dish is super flavourful, super healthy, and one of the quickest dinners I’ve made in a while.
This is another one I love the versatility of as well. It can replace the scrambled eggs in your morning breakfast; It can be served as tacos, spread over toast, and adjusted based on the veggies in your refrigerator.
