Hot Wing Nugget Tofu Burgers and Homemade Tortilla Chips
Tonight Andrew made us some awesome crispy homemade tortilla chips, while I scavenged the last of the groceries into an entree. I’m actually really pleased with what I came up with. It only took about 20 minutes total, and these burgers are delicious! They’re stuffed with a pile of tofu wing nuggets atop jalapeno cilantro hummus drizzled in Franks Red Hot Sauce. The flavours and spices are great and the soft texture of the tofu make them almost cheesy.
The tortilla chips turned out soft and crispy like a truly authentic mexican kitchen. They only take two ingredients and both of those ingredients are pretty much staples in this household- tortillas and safflower oil (or other cooking oil). These are also awesome for being speedy homemade snacks; At six minutes a batch, they’re quicker than some microwave meals!
1/4 c flour
2 tsp chilli powder
1 tsp coriander
2 tsp cumin
1/4 tsp black pepper
dash of salt
1 block extra firm tofu
safflower oil (or other cooking oil, for frying)
4 tbs Buffalo Sauce (or a mixture of hot sauce and vegan butter)
lettuce or celery slices
1/2 c Jalapeno Cilantro Hummus from Trader Joe’s (or this Jalapeno Aioli Recipe-at bottom of page)
Mix flour, chili powder, coriander, cumin, black pepper and salt in a bowl. Set aside.
Drain tofu, but don’t pat it dry. Cut into nuggets 1/4 thick.
Heat your oil in a pan and set your flour mixture and tofu nuggets next to it.
Roll your tofu nuggets in the flour mixture individually with a fork or spoon. Coat fully and drop in pan.
**If you like your tofu firmer, you can also bake the coated nuggets for 10 minutes or so in a 350 F oven before frying.
Flip when underside sizzles and bubbles and the bottom becomes crispy (about 5-8 minutes, depending on the heat of your oil).
Make enough to put 5 or so nuggets on each burger.
Construct your burgers. Toast your buns, layer with hummus, tofu nuggets, buffalo sauce, lettuce, or any toppings your heart desires.
Tortilla Chip Recipe
safflower oil (or other cooking oil)
Cut or rip tortillas into triangular parts. Fill pan with 1/8 inch of oil and heat on medium heat. Fry triangles for about three minutes on each side. They’ll cook slower at first but as your oil heats up they’ll begin to cook pretty quick. Allow them to harden in the pan but they will get crispier once pulled out. Lay on a paper towel or something similar that can absorb the oil as they dry and crispen.
