Back in The Kitchen with a White Bean and Peach Panzanella (Served here as Bruschetta)

This delightfully refreshing and creamy Panzanella or bruschetta is totally ready for its debut at late summer garden parties, quaint backyard weddings, and classy dinners with guests to impress. The romantic mixture of crisp basil, sweet fruit, and the crunch of the toast are delectably dressed with a light red wine vinegar and dijon peach dressing; Each bite whisked me right away to the flavours of an Italian august afternoon, sitting just outside a little bistro on the water and enjoying a warm and salty breeze.

This panzanella is simple and fast enough to make for a lot of people and convenient to make for a romantic night in for 2. It also fits the bill of any high class event and can easily precede an entree or take the stage itself. If you fancy them, a very light sprinkling of pine nuts would be a really lovely addition.
